Masala Khichdi | वेज मसाला खिचड़ी । Indian Masala Vegetable Khichdi

Namaskar. Welcome to Today we will make Sumptuous Vegetable Masala Khichdi. Khichdi is a one pot meal in itself. The veggies and rice used has both vitamins and minerals. Whenever you need to cook in a hurry, you can make yummy khichdi instantly. Today we will use a lot of veggies and spices in the khichdi, whick will make yummy khichdi. Let’s start making Vegetable Masala Khichdi. For khichdi take 1/2 cup basmati rice, soaked in water for 30 minutes. If you are taking broken rice for khicdi, then it cooks easily, soaking not required. You can just wash and use it. take 1/2 cup moong dal, soaked in water for 30 minutes. If soaked the dal and rice are cooked easily. For Khichdi put dal and rice to boil in cooker, Put the rice in cooker, You can also add ghee and roast the veggies. Then add dal rice, add water and boil rice. Aur cook veggies separately, mix with boiled rice dal later. We are cooking the veggies separately, as it will remain a bit crunchy. If veggies are roasted and added to rice and dal, then the veggies will turn soft. Very soft veggies won’t taste good as crunchy ones. Now add 2.5 cup water in it. Do not add much water in cooker, as it will spill out. Cook until a single whistle. Shift khichdi to cook on another flame, Meanwhile cook veggies for the Khichdi. Pour 2 tbsp ghee in pan. You can adjust the quantity of ghee as desired. Khichdi tastes good with ghee. Ghee is hot enough. Add 1/2 tsp cumin seeds in ghee. as cumin seeds are roasted, add less than 1/2 pinch asafoetida. add 1/4 tsp turmeric powder. Reduce flame to minimum, to prevent spices from browning. Add 1/2 inch finely chopped ginger piece. 2 finely chopped green chilies, Here we have whole spices, it has 7 black pepper, 2 cloves and coarsely grind them and add. If you prefer eating onion and garlic, then add 3 to 4 garlic cloves and 1 onion finely chopped, and saute until slightly pink. Put potatoes to fry and cook until crunchy, There’s a whistle in cooker, turn off flame. Potatoes are roasted and crunch, add cauliflower and green peas, Roast well until crunchy and soft. Cabbage and peas are roasted for1 minute. these are crunchy as well. Add capsicum and roast for 1 minute. Capsicum are roasted quickly, now add tomato and cook it . You can take any veggies as desired, Veggies are crunchy and roasted, add 1 cup water to it. Add salt, you can also add salt in dal and rice. Add red chili powder and garam masala. If you prefer it spicy add more red chili powder. Mix all ingredients well. Open cooker and check if pressure is released. Rice dal is cooked but quite dense. Water is added to veggies, add 1 more cup water to it. Let it boil. You can keep the khicdi dense or slurry as desired. Veggies are boiling add dal rice to the pan, khichdi seems dense, add water in cooker then pour in pan. Mix well and cook for 1 to 2 minutes. 2.5 cup water is used in the veggies. Khichdi is cooked and ready. Add a little green coriander, take out the khichdi in a serving bowl. Vegetable masala Khichdi is ready. It is really delicious. Garnish khichdi with some ghee. It enhances the flavor of Khichdi. Khichdi is served with papad,chutney, pickle and curd.
